Pumpkin Pie Breakfast Bars
I can never have enough breakfast recipes on hand- especially ones that I likely have the ingredients for! This one was really easy to whip up, too. Recipe is from Fit Mitten Kitchen and I didn't really change anything.
Ingredients:
1 1/2 TBS Flax seed meal & 1/4 cup water
1 Cup Quick Oats
1 Cup 1:1 Gluten Free Flour
1 TBSP Pumpkin Pie Spice
1 Tsp Baking Soda
1/4 Tsp Salt
3/4 Cup Pumpkin Puree
1/3 Cup Maple Syrup
1/4 Cup Olive Oil
1 Tsp Vanilla Extract
1/2 Cashew (Or Some Non-Dairy Milk)
1/3 Cup Chocolate Chips
For the Glaze:
1/2 TBSP Cocoa Butter
1/2 TBSP Natural Peanut Butter
Instructions
1. Preheat Oven to 350
2. Combing flax seed with water and let sit for 5 minutes.
3. In a medium bowl, combine oats, flour, pumpkin pie spice, baking soda, and salt. Set aside.
4. In a large bowl, combine pumpkin puree, maple syrup, oil, and vanilla extract. Add in the flax seed mixture and milk and stir until combined.
5. Add dry ingredients to the wet ingredients. Before mixture is fully combined, fold in chocolate chips. Batter should be thick and wet, but not too heavy.
6. Transer mixture to an 8x8 pan and bake at 350 F for 18-22 minutes. ( I ended up baking mine for about 24 minutes, actually.)
7. While the bars are cooling, melt together the ingredients for the glaze. Drizzle and enjoy!
