Mixed Berry & Goat Cheese Brownies
Yes, it works. Trust me. Gluten free, no added sugar, and natural sweeteners. Bonus: you can eat them for breakfast because they have oats in them.
Ingredients
{brownies}
5 oz bittersweet chocolate
5 tablespoons coconut oil
1/4 cup almond milk
3/4 cup maple syrup
1/2 tsp vanilla
1/2 cup oat flour
1/8 tsp baking powder
1/2 tsp salt
{berry cheese swirl}
6 oz goat cheese, softened
1 tablespoon butter, room temp
2 tablespoons maple syrup
1/4 teaspoon vanilla
1 cup berries
Suggested Guidelines:
Get your berries out first and let them thaw if frozen. If not frozen, you can still just have them ready :)
Using a double boiler, melt the coconut oil and chocolate. When melted- remove from heat and stir in the milk. Let the mixture cool completely.
Meanwhile, mix together oat flour, baking powder, and salt.
Back to the bowl of chocolate: stir in maple syrup, vanilla, and eggs. Add the dry ingredients until smooth.
Using a mixer fitted with a wisk attachment, beat the goat cheese, butter, maple syrup, and vanilla until smooth.
In an 8x8 greased pan, pour in the brownie mixture. Spoon cheese mixture over and then berries. Use a knife to mix the layers together creating the marbled effect.
Bake for 25-30 minutes.
