Peach Cobbler
Recipe Adapted from LoveandLemons.com
1/3 Cup Rolled Oats
1/3 Cup Chopped Pecans
1/4 Cup Flour, any kind (I used buckwheat and it was shockingly good)
1/3 Cup Coconut Sugar
1/2 teaspoon Cinnamon
A Pinch of Salt
3 Tablespoons Butter
8 Peaches (The original recipe called for peaches & plums. I didn't have any plums and i'm not even sure if I like plums. Just follow your heart.)
Directions:
preheat oven to 350 and grease a medium cast iron skillet or 9x9 baking dish. I like to use coconut oil. 😊
Using a food processor, pulse together oats, pecans, flour, sugar, cinnamon, and salt. Add the butter and give it a few more pulses until it clumps together. (If it's too dry, add some more butter or water. If it's too wet, more flour)
Place sliced fruit in pan and the oat crumble on top. Bake for 15-18 min. As is true for most desserts, it wouldn't hurt to put some ice cream on top. We didn't have any but this still hit the spot. Enjoy!
